Sodexo has an exciting opportunity for an experienced Executive Chef/Culinary Nutrtion Center Director to lead an exceptional team in creating delicious, sustainable meals for the Springfield School district at our Culinary Nutrition Center located in Springfield, MA.  ****Relocation assistance available****

 

The Culinary Journey at CNC is a story of leadership, vision, innovation, collaboration, and the rediscovery of nourishing local fare. Together, the Springfield School District and Sodexo have embraced a sustainable approach to centralized commissary production that has revolutionized school lunch for 30,000 students a day.

 

The successful candidate will be responsible for leading the culinary team in a busy commissary organization, including student dining experiences, menu planning, sanitation and regulatory compliance. Experience in high food production/manufacturing experience highly desired.

 Primary Responsibilities and Expectations:

  • lead and direct the creative culinary team in a high-volume commissary organization
  • ensure Sodexo Culinary standards including recipe compliance and food quality
  • manage food costing, controls and compliance
  • develop student dining menus and culinary offerings
  • have high expectations for customer service and quality of food
  • have the ability and willingness to develop and train frontline employees
  • have a passion for food and innovation
  • experience with online Food Management systems
  • manage USDA commodity products
  • strong computer systems skills
  • manage a team of supervisory employees

 

The ideal candidate has:

  • a strong culinary background, with the demonstrated ability to stay current with new culinary trends
  • proven success in high volume/high quality production such as catering or central kitchen
  • a passion for sustainable sourcing
  • a collaborative approach to managing
  • knowledge of special diets and allergens
  • excellent leadership and communication skills
  • a sense of urgency
  • experience managing effective production schedules and production process flows
  • SERV Safe certification, culinary degree preferred
  • Experience managing union employees, preferred but not required
  • Lean Six Sigma training preferred

Position Summary

Provides culinary leadership within a large sized unit including menu planning, program execution and staff management & training.  Works directly with internal and external clients managing the catering process from beginning through execution. 
Key Duties
- Implements & coordinates the culinary function. 
- Directs & trains cooks & utility workers.
- Ensures food preparation & production meets operational standards.
- Manages catering & retail areas.
- Customer & Client satisfaction.
- Financial management to include food cost & labor management.
- Manages food & physical safety programs.
 

 

Qualifications & Requirements

Basic Education Requirement - Bachelor’s Degree or equivalent experience

Basic Management Experience - 3 years   

Basic Functional Experience - 3 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
