Sodexo is seeking an innovative Executive Chef 3 to oversee all culinary aspects of Sodexo’s Food Service at California Lutheran in Thousand Oaks, Ca – a $7 Million campus "Showcase" account located in Southern California, one hour north of LA and 1 hour South of Santa Barbara. Cal Lutheran is a small, private, close-knit campus with a population of 1100 student residents, 2000 commuters and 400 staff and faculty - serving three meals per day with a late night dinner offering . Cal Lutheran has 5 food locations on Campus; the Resident Dining Hall serving 1800 Resident Dining meals a day - including an allergen free station, Mindful Mondays, a Chef's Action station on Wellness and Healthy Eating; a Convenience store, Retail Cafe, Jamba Juice, Starbucks, "Grab & Go" Kiosk as well as Catering & Catering service at a new Conference Center.
This Executive Chef will need to be very knowledgeable about nutrition, plant based meals and allergen free food – will be highly involved in student education and mentoring on healthy eating. The Executive Chef will be very interactive with students, faculty and staff, be on the floor and daily Action Stations. He/She will also work closely with the sustainability committee on campus and must have knowledge of sustainable foods, including seasonal and local foods. Chef is involved with student organizations, such as fund raising and student gardening.

Provides culinary leadership within a large sized unit including menu planning, program execution and staff management & training. Works directly with internal and external clients managing the catering process from beginning through execution.
- Implements & coordinates the culinary function.
- Directs & trains cooks & utility workers.
- Ensures food preparation & production meets operational standards.
- Manages catering & retail areas.
- Customer & Client satisfaction.
- Financial management to include food cost & labor management.
- Manages food & physical safety programs.
Basic Education Requirement - Bachelor’s Degree
Basic Management Experience - 3 years
Basic Functional Experience - 3 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
