    Sodexo Dining Services at University of Arkansas Little Rock is seeking Executive Chef 2 to support the culinary operations for this state university located Little Rock, AR. Sodexo has partnered with UA Little Rock for the past ten years, providing Dining services to its student body population the managed volume of the account is approximately $4.4 million. This is a highly visible culinary position with a 20/80 split between Front of the house and Back of the house responsibilities. Additional duties include, purchasing, client communication, assisting with catering, monitoring food production, managing culinary staff, food safety and sanitation standards. Sodexo's services at UA Little Rock features: Residential Dining, Taco Bell, Starbuck's, Trojan Grill, Trojan Bistro, Business Brewing, 2 convenience stores, and a small Starbuck's Kiosk in the library building.  The Chef will oversee all aspects relating to food production as well as catering on the entire campus.  This position reports to the Operations manager and the unit is additionally supported by a Catering manager, Retail manager, Unit Controller, HR Clerk, who all report up to an on-site Area General Manager.

     

    The ideal candidate will present with the following: 

    • Has a passion for leading, training and developing a team.
    • Speaking and engaging with high level clients.
    • Experience purchasing/ordering inventory.
    • Experience training and leading a front and back of the house team.
    • Has knowledge and experience in HACCP and food safety guidelines.
    • Experience with cost control measures. 

    Position Summary

    Provides culinary leadership within a medium sized unit including menu planning, program execution and staff management & training.  Works directly with internal and external clients managing the catering process from beginning through execution. 
    Key Duties
    - Implements & coordinates the culinary function. 
    - Directs & trains cooks & utility workers.
    - Ensures food preparation & production meets operational standards.
    - Manages catering & retail areas.
    - Customer & Client satisfaction.
    - Financial management to include food cost & labor management.
    -  Manages food & physical safety programs.

     

    Qualifications & Requirements

    Basic Education Requirement - Associate's Degree 
    Basic Management Experience - 2 years
    Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
