The University of Vermont dining services is looking for a strong culinarian to lead the team of our new 450 seat dining hall located in central campus. This dining hall serves over 625,000 meals annually during the academic school year.
The dining hall has 9 open concepts along with an exploration station and a teaching kitchen.
We are searching for a Chef who has a passion for local food and training culinary staff. We are also searching for someone who has a drive to create, work with student groups and be a out going member of our large culinary team on campus.
University dining, sustainability, local and farm to table, culinary teaching are among the traits that would make a candidate stand out for this position.
This dining hall is open 7 days a week during the academic calendar year with closers during Thanksgiving, Christmas and summer. The chosen candidate will have full time employment and will work on other projects during down times.
Provides culinary leadership within a medium sized unit including menu planning, program execution and staff management & training. Works directly with internal and external clients managing the catering process from beginning through execution.
- Implements & coordinates the culinary function.
- Directs & trains cooks & utility workers.
- Ensures food preparation & production meets operational standards.
- Manages catering & retail areas.
- Customer & Client satisfaction.
- Financial management to include food cost & labor management.
- Manages food & physical safety programs.
Basic Education Requirement - Associate's Degree
Basic Management Experience - 2 years
Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
