    Reporting to th
    e Executive Chef and Patient Dining Operations Manager, you will be responsible for providing restaurant quality meals to our patients in addition to menu planning, sanitation and regulatory compliance.

    Primary Responsibilities and Expectations:

     

    • Implementation and standardization of all culinary systems and procedures for patient dining: ensure Sodexo Culinary Standards including recipe compliance and food quality
    • Maintain inventory control, HACCP, cleaning schedules, staffing plans, presentation and quality of food, kitchen cleanliness, safety, etc. Sodexo standards will be the benchmark
    • FMS: Monitoring, Audits, implementation and standardization for new menus
    • Responsible for Food and Physical Safety and annual training for all hourly associates
    • Improve and standardize  menus based on client needs
    • Implement innovative and fresh ideas in patient services
    • manage food costing, controls and compliance
    • have high expectations for customer service and quality of food
    • have the ability and willingness to develop and train frontline employees
    • have a passion for food and innovation
    • experience with online Food Management Systems 

    The ideal candidate has:

    • basic understanding of nutritional standards
    • a strong culinary background, with the demonstrated ability to stay current with new culinary trends
    • excellent leadership and communication skills
    • Strong computer skills and proficient in production systems
    • proven success in preparing fine dining quality food 
    • a collaborative approach to managing
    • a sense of urgency
    • experience working in a healthcare environment preferred, but not required
    • SERV Safe certification, culinary degree preferred
    • Experience managing union employees, preferred but not required

     

     

    Position Summary

    Provides culinary leadership within a medium sized unit including menu planning, program execution and staff management & training.  Works directly with internal and external clients managing the catering process from beginning through execution. 
    Key Duties
    - Implements & coordinates the culinary function. 
    - Directs & trains cooks & utility workers.
    - Ensures food preparation & production meets operational standards.
    - Manages catering & retail areas.
    - Customer & Client satisfaction.
    - Financial management to include food cost & labor management.
    -  Manages food & physical safety programs.

     

    Qualifications & Requirements

    Basic Education Requirement - Associate's Degree 
    Basic Management Experience - 2 years
    Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
