  • Unit Description

    Sodexo Universities is seeking an innovative Executive Chef 2 for our long standing account at Alma College - in Alma Michigan, less than an hour from Lansing, MI and 2 hours from Detroit, MI. Alma College is a liberal arts college which we have had the pleasure of serving for 65 years.  The Executive Chef oversees multiple production areas including Resident dining for over 1200 students on meal plans, Small Food Retail concepts, and On and Off Campus Catering.

     

    The main Serving at Hammilton's Commons, renovated in 2013 with stations including Mongolian WOK, Pasta to order, Grill, Pizza, Daily Comforts, My Zone, Salad Bar, Desert and Deli Station and Simple Servings.  We also have one retail outlet in a seperate buiding called Joes. This is a typicall grill retail with to go options plus a small country store. Catering is very important on campus and besides providing catering all over campus we aso do several events at the Presidents Home.

     

    As a hands-on Executive Chef, you will provide innovative, exciting and appealing cooking and catering for students, faculty and staff. This individual will come highly recommended as a skilled and experienced culinarian with a passion for food and the drive to be successful.

     

    Reporting to the General Manager, the ideal Executive Chef candidate will possess the following:

    • high-volume, quality-focused culinary management experience, preferably within a campus dining setting;
    • innovative and creative Catering background;
    • exemplary communication skills with the ability to lead a large team;
    • strong organizational skills -detail-oriented and task focused;
    • a very hands-on cooking and training approach;
    • experience in successfully controlling food and labor costs.
    • strong computer skills; and
    • strong HACCP training skills.

    Position Summary

    Provides culinary leadership within a medium sized unit including menu planning, program execution and staff management & training.  Works directly with internal and external clients managing the catering process from beginning through execution. 
    Key Duties
    - Implements & coordinates the culinary function. 
    - Directs & trains cooks & utility workers.
    - Ensures food preparation & production meets operational standards.
    - Manages catering & retail areas.
    - Customer & Client satisfaction.
    - Financial management to include food cost & labor management.
    -  Manages food & physical safety programs.

     

    Qualifications & Requirements

    Basic Education Requirement - Associate's Degree 
    Basic Management Experience - 2 years
    Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
